Spinach is one of those things that we’ll all vaguely aware of and usually happy to eat, but that we don’t always actively add to our diet. Spinach Soup

Melt 50g butter in a saucepan and add 1 medium onion and 2 garlic cloves, all finely chopped. Fry for between 5 and 6 minutes. Stir in 1 medium sized potato, peeled and chopped into chunks. Cook for a further minute before pouring in 450ml of chicken or vegetable stock. Simmer for 8 to 10 minutes until the potato starts cooking, then pour in 600ml of milk and bring to a simmer. Stir in 225g of fresh spinach, chopped, and the grated zest of half a lemon. Simmer whilst covered for another 15 minutes, then allow to cool for 5. Process this mixture in a blender or food processor after adding a further 225g of chopped spinach – continue until smooth in consistency. Return to the pan and reheat, then add seasoning to flavour. You can also freeze the soup prior to reheating to save for up to 1 month.

Tomato, Squash, and Spinach Curry

Cook 1 large onion, halved and sliced, in 1 tbsp of oil for 5 minutes until soft. Add 2 tbsp of madras curry paste and cook for another 3 minutes. Add 1 small butternut squash, cut into shunks, and 5 quartered tomatoes. Pour in 200ml water and give a good stir. Cover the dish and simmer on low heat for 15 minutes until tomatoes have broken down and the squash is cooked. Stir in 100g of chopped spinach, then leave for a few minutes to give it time to wilt. Add seasoning as you wish and serve with rice.

Spinach, Pine Nuts and Feta Pastry

Heat your over to gas mark 6, 200°C or 180° if fan-heated. Mix 200g of cooked spinach with a handful of pine nuts, 1 onion sliced and lightly cooked in butter until soft, and 2 tbsp of balsamic vinegar. Cut a sheet of puff pastry, either ready-rolled or homemade, into 4 quarters. Place on a baking sheet and create a gentle border around the edge before lightly glazing. Divide the spinach and feta mix between these four pieces, placing the mixture within the borders. Bake for 20 to 25 minutes in the oven until puffed up and golden in colour.
